oatmeal at starbucks

Yesterday I went to get my car checked up.
While I was waiting at the lobby, I decided to have Starbuck's oatmeal.
It is supposed to be a healthy and low calorie menu.
While the oatmeal itself was very low in calorie (and it was good), the toppings that came with were high in calorie.
Nuts---100kcal
dried fruits---100kcal
brown sugar---50kcal
I dont usually add much toppings so it does not matter but if you pick this item just because it it lower in calorie, be careful .(^^;)

Croissant 2




After I found my favorite croissant recipe, now I am searching for my husband's favorite croissant recipe.


He likes his croissant crispy and flaky like pie.


Today, I guess I took a relatively longer proof time so I got fluffy and tender croissant which I like.


My husband liked the crust but not happy about the crumb (he said, "it is too moist").


So in the second batch, I refrigerated the shaped dough for 30 minutes.


Then, I did short proofing (40minutes) and took a longer bake time.


Which yeild crispy croissants. Yum.

croissant

Past 3 days I've been baking croissants.

I tried 4 different recipes and finally I found my favorite recipe that can yield tender and fluffy crumb.

I like crispy and flaky croissant too but this time I was looking for the recipe of tender croissant.

Now I can make croissant sandwiches with this.

Pita Bread (similar to Daphne's )

I sometimes go to Daphne's Greek Cafe.

I like their warm pita bread but occasionally their bread is really dry and hard... (over toasted?)

So I decided to bake my own Daphne's style pita bread.

The bread was really tender and yummy~~

I should have made hummus as well. Maybe next time!

batard? ficelle?

This is a kind of French bread but I don't know how to call it.
It's bigger than ficelle but smaller than batard and had 3 slashes.
Usually batard has 3 slashes and ficelle has 5 slashes.

Today, I totally forgot to put the dough on canvas and had 2nd rise on parchment...and even worse, I put plastic wrap over the dough.....what was I thinking??
Well, obviously nothing...sigh.
The dough stuck to the plastic wrap and the surface of the dough got rough. That made it difficult to slash.
This bread tastes great but does not look handsome.

I will bake this bread again soon!

3 kinds of bread (straight and refrigerated fermentation method)

Today I baked 3 kinds of bread.

I used straight method to make pain de mie.

Refrigerated method was used to make ham & mayo bread and cinnammon raisin bread.

The dough yield from refrigerated method had very fluffy and light crumb.

UFO bread?

This is an easy variation of 'melon pan' bread (Japanese favorite bread).
Tender and fluffy crumb and a little bit crunchy cookie crust.....wonderful combination!

sesame bread and sausage roll

One of my friends asked me to teach her bread baking.
