square bread with buckwheat flour: mix fruits yeast


mix fruits yeast preferment(soft) 100g(yeast water:flour=60g:40g)
bread flour 280g
buckwheat flour 20g
salt 1tsp
agave syrup 1tbsp
water 180g
oil 1tbsp


memo: 11/19/09, cool weather

knead dough well
1st rise 2 hours
punch down
2nd rise 3 hours
put the dough in a square pan
final rise 1.5 hours
bake for 30 minutes
