Great blog and plenty of information! I have tried some natural yeast breads lately and they are just great. I have been working on breads with raisin yeast and fruits yeast, but always mixing in some dry yeast. I live in Taiwan.

Hi, i have Seen your comment at "the fresh loaf". I am also baking with Wild yeast water - used in preferments. I am also using sourdough in parallel, sometimes. I only make yeast water from my organic rye grain. You can check my blog if you want:
