This is a cool blog. You say "bake at your own risk"... What is the risk? I can't find any other sites that describe a similar method of yeast production... is there some other name for this yeast/water process?

There is almost no risks to bake in this method :).
I just need to let people know that they might grow mold with yeast water.

you can bake really good bread with this method, if you are interested in natural yeast water baking, please try and enjoy!

I don't know if there are any other people who are blogging about this way of bread baking in English....

I use bread knife for slicing bread.

the knife is about $10 and works well for the price!
