Clementine Yeast Water:preferment

An clementine was forgotten on the kitchen counter!
So I decided to make yeast water with it.
On the same day, a jar of marmalade was finished so I used it without washing it.
Yeast water was made in 3 days.
Now I am making preferment.
4 hours after the yeast water was mixed with flour.
