After I add the yogurt, do I keep it on my counter for another 2 days or put it in the refrigerator? Thanks for your blog, I am making my first preferment dough with a banana yeast water. :)
hiYou can leave your mixture at room temperature for 6-12hours. If it is very hot, maybe 3-4 hours is enough.Adding yogurt it just to make the yeast water stronger so you do not have to make the mixture bubble too much.make sure to use plain yogurt with active culture.good luck!
