apple yeast water baking (Pain de mie)


I got a new kitchen aid mixer4.5qt last week.

Then I made this bread with it 3 days ago.

The crumb is still so soft and fluffy because of the natural yeast.

Heavenly delicious.....

I still haven't made Pain De Mie yet, but I've been futzing about with various recipes. If you want, you can look at my blog, where I have bee posting my triumphs (or lack thereof). I have posts coming up each day for the next couple of days, and I am trying again today, but with a no-sugar pure white flour version.

I've been reading your posts on yeast water with great interest. But I have a question on your recipes. When you say 100g or 70g and so on, are you measuring by weight or a measuring cup?

Hi.

I am measuring by weight.

I personally do not trust the recipes that use cups to measure dry ingredients like flour....because it is not accurate at all so I prefer using a scale.
