Your breads and rolls are beautiful. I am 9 years old and I am going to do my science fair experiment with natural yeast because my mother is allergic to commercial yeast and I want to find out if natural yeast will affect her skin. I am happy to see that you have done so much successful experimentation with natural yeasts - wish me luck!!

Thank you for the compliment! My apple core yeast water is very bubbly like apple soda, after 7 days, so I put it in the refrigerator, is that ok? Tomorrow I am going to make my first natural yeast bread by myself and with a little help from my mother.
I'll let you know how it turns out!

I made two batches of buns and I used apple core yeast and they turned out yummy! My Mommy can eat it and not have a bad reaction and she is very happy:) Thanks for all your good information on this blog!

We made the black tea bread with your recipe and it was delicious, very sweet and soft.
Our second batch of apple core yeast bread came out kind of flat and a little sour. We added more apple core to the existing apple yeast water, maybe it fermented too long?
We will try more black tea this week. Raisin yeast water is not getting bubbly after 5 days?
